Sri Lankan Ingredient Highlight: Coconut 🥥
You can guarantee that coconut is served breakfast, lunch, and dinner in any ‘Lankan household! Coconut milk and coconut is popularly used in a variety of Sri Lankan food and beverages. It is incredibly versatile; as water, milk, shredded, toasted, the fresh sweet & nutty flesh by itself. We add coconut milk to our Sri Lankan Chicken Curry toward the end of the cooking process. Not only does it create a rich & flavorful sauce, it also tempers and balances the lively spices.
Such an awesome flavour. Just the right amount of heat. Very tasty.
So different to an Indian Curry. Much more flavour and so easy to cook.

I have struggled to find convenient ways to re create our family recipes, especially when I’m time poor. Unfortunately with most srilankan takeaway its quick but too hot for the children. I stumbled across gedera and co and thought i would give it a try.
